Cook the shrimp: In a large skillet, heat the butter and olive oil over medium-high heat. Add the shrimp and garlic, and cook for 2-3 minutes per side, or until pink and cooked through.
Make the sauce: Deglaze the skillet with white wine, scraping up any browned bits. Stir in the heavy cream and simmer for 1-2 minutes, or until the sauce thickens.
